Chinese Hamburger 肉夹馍 Rougamo

Rougamo:

The burger is known as “the world’s oldest hamburger” it is thought to date back to the Qin Dynasty, over 2,000 years ago.

Rougamo (肉夹馍) is a traditional snack from the northwestern region of China. It consists of a type of flatbread and meat filling, along with some additional ingredients and seasonings. The bread is typically made from flour and water, and then baked into a flat round shape. The meat filling can be made from pork, beef, or lamb, often with added scallions, ginger, and other spices, and cooked until it’s tender and flavorful.

The preparation of Rougamo is simple. First, the flatbread is cut in half, and then the meat filling is sandwiched in between. It’s typically served with condiments such as chili sauce, sesame sauce, garlic paste, and vinegar. The combination of the savory meat filling, crispy bread, and flavorful condiments make Rougamo a delicious and satisfying snack.

Rougamo has become a beloved traditional food in China and is enjoyed by people all over the country. Whether it’s made at home or purchased from a street vendor, it offers a delightful taste experience.

Recipe:
2 dl Flour powder 
1 dl water
A pinch of salt
A teaspoon of sugar 
5 gram yeast 
A teaspoon of oil 
 
Mix it all together. Please note that the dough should be very loose or wet. 
When mixed let it rest under a cover for 10 to 30 minutes.
 
Make 4 dough balls and follow the instructions in the video.
We bake them in a frying pan with lid, at medium heat. Baking time is around 10 to 15 minutes. 
Now you have a hamburger bread with automatic opening 🙂

Filling:

Around 75 gram of meat pr hamburger. 

Note that you can upscale the recipe as needed. 

For the filling we used meat we already had in the fridge. Chopped it in pieces and mixed it up with some fresh spring onions and green pepper 🫑 you can use almost any meat or seafood you have in your fridge and add sauces like teriyaki, sweet & sour or even ketchup to spice it up to your own liking.
