Di San Xian  地三鲜 a delicious fried vegetarian disk

Disanxian (Chinese: 地三鲜; pinyin: Dìsānxiān) is a Chinese dish made of stir-fried potatoes, eggplants, and sweet peppers. Other ingredients may include garlic, spring onion, etc. The name roughly translates to “three treasures from the earth” because it consists of the three key ingredients listed above. It is considered a classic dish in Northeastern Chinese cuisine, and is common in northern China.

Disanxian 中文:地三鮮;拼音:Dìsānxiān)是一道由炒土豆、茄子和甜椒製成的中國菜。  其他成分可能包括大蒜、蔥等。該名稱大致翻譯為來自地球的三件寶藏,因為它由上面列出的三種主要成分組成。  它被認為是中國東北菜中的經典菜餚,在中國北方很常見。

How to:
Peel the potatoes and cut them into small pieces.  (see video)

 Boil the potatoes until about 80% ripe.  (almost cooked)

 It works best if you let the potatoes cool down before frying.

 Cut the peppers and eggplant into cubes the same size as the potatoes.

 Add oil to the frying pan and pour the eggplant, you will see that the eggplant absorbs a lot of oil.

 Add bell peppers 🫑 and fry until cooked.

 Fry the potatoes with a little salt and pepper.  Fry until lightly browned.

 Put sliced garlic and green onion into the fry pan with a little oil, add a little soy sauce, add 1 dl water and a 1/2 tablespoon of cornstarch, pour the three kinds of vegetables into the fry pan and stir fry quickly and remove it.
