almond tuiles 杏仁瓦片

This recipe makes 16pc/1 pc= 15g

Ingredients :

50g Egg White
52g Sugar
25g Unsalted Butter
33g Cake Flour
92g Sliced Almonds 

1. Put the egg whites and sugar into the pot first.

2. Heat over water and stir gently with a rubber spatula until the sugar dissolves.

3. Melt the unsalted butter in the microwave, then add it and mix well with a mixer.

4. Add the sifted low-gluten flour and mix well.

5. Add almond slices,

6. Cover with plastic wrap and refrigerate for a while or overnight.

7. The next day or little while take out the almond batter and let it cool at room temperature.

8. Prepare a baking tray and line it with baking paper.

9. Use a spoon to take a 16g portion of almond batter and place it on the baking paper, keeping an appropriate distance. ((Ps. Don’t be too close, so that they will not stick together after baking.)

10. Prepare a round frame with a diameter of 9cm, and use a fork to spread each almond batter evenly.

11. Or spread directly on the baking sheet. It can also be cut into cubes after baking.

12. Heat at 160°C and heat at 150°C for 18~20 minutes (Ps. e.g. If there is no upper   or lower heat setting, you can bake at 160°C

 18~20 minutes.) After taking it out of the oven, let it cool and keep it sealed.

33g 低筋麵粉

92g 杏仁片(薄的)

  1.   先將蛋白.砂糖放入鍋子裡.
  2.   隔水加熱,用橡皮刮刀輕輕地拌至砂糖溶解即可.
  3.   將無鹽奶油微波融化後加入,用攪拌器拌勻.
  4.   將已經過篩的低筋麵粉加入拌勻.
  5.   加入杏仁片,
  6.   封上保鮮膜,冷藏一會兒或一晚。
  7.   隔天或一會兒,將杏仁麵糊取出,放置室溫退冰.
  8.   準備一個烤盤,鋪上烤焙紙.
  9.   用湯匙取一份為16g的杏仁麵糊放在烤焙紙上,保持適當的距離.((Ps.不要太近,才不會烤完的時候都黏在一起.)
  10. 準備一個直徑為9cm的圓框,用叉子將每個杏仁麵糊都平均攤開來。
  11. 或者直接平攤在烤盤上。烤好後也可切成方塊。
  12. 上火160°C下火150°C 18~20分(Ps.如

        果沒有上下火設定,則可以烘烤160°C

         18~20分.)出爐後,放涼,密封保存.
