Snowskin mooncakes. 手工制作冰皮月饼
1. Filling:
Ingredient :
Milk Powder 35g
Wheat Starch 25g
Milk 100 g
Stir well
2 Eggs
Honey 60g
Production process:
All Ingredient Whisk until smooth.
Pass the mixture through a strainer.
Butter 40 g, Cook over low heat, stirring constantly with spatula, Keep pressing until we no longer see any clumps.
It’s ready when it’s able to hold its shape and doesn’t stick to pan. Honey custard filling is ready.
Cover and cool to room temperature, then chill in the fridge.
You can also prepare the filling the night before.
After chilling, divide the filling into 6-10 pieces, each about 25g.
Place the filling in the fridge.
2. Soft Crust
Ingredient :
Glutinous rice flour 25g
Rice flour 25g
Wheat starch 15g
Caster sugar 15g
Milk 115g
Condensed milk 10g
Oil 15g
Production process :
Add all ingredients into the bowl Whisk until smooth. Pass the mixture through a strainer to remove any lumps.
Steam on medium low heat for 25 minutes
over with a plate to prevent water from dripping into the bowl.
Cook 2 Tbsp of glutinous rice flour over low heat for 5 minut . Used for dusting.
Cut the snowskin into small pieces.
Use a spatula to knead it until it becomes a smooth dough.
Knead until the dough is smooth and elastic
Wrap snowskin with cling wrap and set aside.
Prepare some beetroot juice. 100ml water
Add 3.5g Agar-agar powder. Bring up to a boil. Add about 1 /4tsp beetroot juice for colouring. Continue to simmer over low heat for another b minutes.
Quickly pour onto a tray while it’s still hot, tilt the tray until the agar is evenly thick.
Allow to cool & harden at room temperature.
Cut out the agar using piping tip.
Cut out the shape of bunny’s ear.
We can now assemble our mooncakes.
Take 20g of snowskin, and roll into a ball
Flatten the snowskin, Wrap the filling and seal it completely. Roll into a smooth ball.
Lightly dust the snowskin with cooked glutinous rice flour.
Place the jelly on top of the snowskin to make bunny’s ears.
Roll tiny bit of snowskin into a ball for bunny’s tail. After all Sprinkle of coconut powder, if you like it.

將所有的原料搅拌均匀後,面糊过筛进锅里。加入黄油 40克,小火煮,不断搅拌,
不停按压直到看不到结块,炒到馅料可以包成团,不粘锅就可以了。
蜂蜜奶黄馅煮好备用。盖上保鲜膜,放凉然后冰箱冷藏。馅料可以提前一天准备好。冷藏后,馅料分成六至十份,每份约25克。
2. 皮:
原料:
糯米粉 25克
粘米粉25克
澄粉15克
鈿砂糖15克
细砂糖15克
牛奶115克
炼乳 10克
油15克
製作過程:
把所有的原料搅拌均匀,面糊过筛倒入碗中。上鍋蒸25分钟中小火。盖上盈子防止水蒸汽滴进碗里。
准备一些熟粉,2大匙糯米粉小火炒五分钟
冰皮趁热切成小块。用刮刀按压面团 ,揉至面团光滑有弹牲,口感会更好 。把冰皮包起来备用 。 淮备好甜菜根汁 ,100ml water。加入3.5克瓊脂粉 ,中火煮沸 。加入大约1/4茶匙甜菜根汁 ,小火继续煮五分钟 ,趁热快速倒入托盘,摇晃直到厚薄均匀 ,室温放涼备用
裱花嘴切出兔子耳朵形状 。
我们可以开始组装冰皮月饼 :
取20克冰皮,搓圆 ,压扁,加在冰皮上一小块有色的冰皮。再压平,包上馅料 ,合口过程(请查看视频),搓圆 。撒上熟粉。
把果冻放在冰皮上做免子的耳朵 。取一点冰皮搓圆做免子尾巴 。再撒上椰蓉碎。软糯冰皮包裏着蜂蜜奶香味冰皮月饼做好了。
