Stir-Fried Green Peppers with Shredded Beef 牛肉絲炒青椒

Material:

Calf 300g
green pepper 100g
Sherded 100g

Rapeseed oil 1tbsp
if you like you can add it

(chill 10g)
(garlic 15g)

seasoning

salt 1/4tsp.
sugar pinch
black pepper powder 1/2tsp.
cooking rice wine or brandy 1tbsp.

Cured Veal Ingredients:

A

Salt 1g
starch 1-2tsp.
water 2tsp
egg white 2tsp
(cooking rice wine 1tsp)

B

rapeseed oil 1tbsp
Production Method:

 1. Put all ingredients A into a large bowl and mix evenly. Add shredded beef and stir well until all the water is absorbed by the beef.

 1. Add the oil of marinade B and mix well.

 2. Heat the pan, pour 1 tablespoon of oil (Ingredients, add marinated shredded veal, stir-fry until it changes color. (Add minced garlic and chili until fragrant)

 3. Add all the seasonings and stir-fry evenly, then add the shallots and green pepper shreds and stir-fry for a few times until the meat and green pepper shreds are evenly distributed.(or last moment add brandy 1tbsp.if you have.)

青椒炒牛肉

材料:

小牛肉絲300公克 

青椒絲100公克 

小香蔥100公克

調味料:

1公克

 少許

黑胡椒粉 1/2茶匙 

米酒1大匙

(或白蘭地酒)

醃製小牛肉料:

A

蛋白2茶匙 

醬油1大匙 

太白粉 2茶匙 

(米酒1茶匙 

1大匙 water 1tsp.

B

菜籽油1大匙 1tbsp.

作法:

1.所有聽料A放入大盆中混合均勻,放入牛肉絲抓勻,抓至水分都被牛肉吸收。

 

  1. 加入醃料B的油抓勻。
  2. 熱鍋,倒入1大匙油(材料,放入醃好的小牛肉絲,炒散且炒至變色。(放入蒜末、辣椒未炒香)
  3. 加入所有調味料炒勻,再放入小香蔥和青椒絲拌炒幾下,讓肉與青椒絲炒均勻即可
