Scallion pancakes are a popular dish in Chinese cuisine and have a long history dating back to ancient China. The story behind scallion pancakes goes back to the Tang Dynasty (618-907 AD), a time when flour-based dishes were popular in China.

Legend has it that scallion pancakes were originally made by a cook who worked for a wealthy family. The cook was tasked with making breakfast for the family and had limited ingredients to work with. He decided to use some leftover dough and mixed in chopped scallions, creating a simple but tasty pancake.

The family loved the pancakes so much that they asked the cook to make them again the next day. Soon, the cook began making scallion pancakes regularly and they became a breakfast staple in the household. Over time, the popularity of scallion pancakes spread throughout China and they became a common street food.

Today, scallion pancakes are still enjoyed in many parts of the world and have evolved to include various fillings and toppings, such as minced pork, egg, and cheese. They are often served as a breakfast or snack item and are a popular menu item in Chinese restaurants.

The dough can be made with or without yeast.

Different shapes and thickness are normal follow local traditions and what filling is used.

The basic version is with spring onion salt and onion.
