Roasted Whole Duck

1 duck around 2 kg

For marinating we used Chinese 5 spice mix. It is a spice blend made of the following spices:

star anise, cloves, cinnamon, Sichuan peppercorns and fennel seeds

(You can similar spices if you don’t find the original Chinese mix.)

Remove moisture from the skin

Rub in the spice mix in the duck skin both on the outside and inside. 

Put in a tight container or plastic back and leave to rest in the fridge for 1 to 2 days. 

After you take it out, you dip it in boiling water for 1 minutt and clean of the excessive spice left on the skin. 

Dry it.

Now make a mix of 1 tablespoons of honey and one tablespoon of vinegar.

Brush it on to the skin, and now it’s time to put in the oven at about 180C for 1 to 1,5 hours.
