Shredded Pork with Sweet Bean Sauce 京醬肉絲

This is a classic Lu(ShanDong province) dish, using pork tenderloin, fried in special self-made sauce, with fine shredded leek, rich in flavor, suitable for young and old.

Ingredients:

450g pork belly, 100ml oil (appropriate amount of sesame oil can be added)

Marinade:

2 tbsp onion and ginger water, 1 tbsp dark soy sauce(if you have wine, add 1 tbsp) , 1/4 tsp white pepper, 1 egg white, 1 tbsp sweet potato starch, 3 tbsp roast duck sauce (you can use steamed Shandong duck sauce), 1 tsp. sugar.

食材:

里肌肉450g、油100ml、(可加香油適量)

醃料:

蔥薑水2湯匙,老抽醬油1湯匙、(如果有酒加1湯匙)、白胡椒1/4茶匙、蛋清1個、紅薯粉1湯匙 、烤鴨醬汁3湯匙(可用蒸熟的山東的大醬)、糖1湯匙。
