Chinese-style Cucumber Salad 酸辣甜鹹,爽口凉拌蓑衣黃瓜

Hot and sour, sweet and salty, refreshing cold cucumber

Cucumber

It is a traditional Shandong famous dish.  This dish is a cold dish cut with a coir raincoat knife and uses cucumber as the main ingredient. It is light and refreshing, sweet and sour and slightly spicy, which is very suitable for summer consumption.  This video will bring you the home-cooked method of strawberry cucumber.

It is best to choose cucumbers that are relatively straight and large.

Wash the cucumbers and remove one end.

2 tsp oil

a few peppers

2 tsp aged vinegar or white vinegar

1 tsp light soy sauce

2 tsp sugar

pinch of salt

a few cloves of garlic

Cucumber cutting knife technique: the coir raincoat knife technique can put a chopstick on both sides of the cucumber.

Sliced cucumbers.  Rotate 180 degrees and then 45.  C oblique knife cut, can not be cut off.

Dehydrate cucumbers with salt

Cucumbers need to be marinated for 30 minutes to 1 hour, and the pickled cucumbers should be drained of water.

Turn on the fire and pour in an appropriate amount of oil. The oil temperature should not be too high. Pour in chili, old mature vinegar or white vinegar, a small amount of light soy sauce, and an appropriate amount of sugar.  To open a small fire.  Stir all seasonings and turn off the heat.

The chili in the sauce is mainly for embellishment, so don’t choose too spicy chili🌶️.

製作步驟:

切黄瓜刀法技巧:蓑衣刀法可以在黃瓜兩面处個放1根筷子。

正刀切黃瓜。 旋转180 45C斜刀切、不可切断。

用食盐杀出黄瓜的水分

黄瓜需腌制30分鐘至1小时,腌制好的黄瓜把水倒掉。

黄瓜造型

将黄瓜盘成圆形斜刀口朝上。

做汁儿

开火热锅倒入适量油,油温不可太高倒入辣椒、倒入老陳醋或是白醋、少量生抽、适量糖。要开小火。将各种调料搅匀关火。

将黃瓜倒入鍋中或將浇汁儿浇到黄瓜上

浇汁儿中的辣椒主要起润色作用,不要选择太辣辣椒🌶️
