Fried Largehead hairtail fish 煎大頭帶魚

The Largehead Hairtail (Trichiurus lepturus) is a species of fish that belongs to the family Trichiuridae. It is also known by various other names such as Largehead Ribbonfish, Atlantic Cutlassfish, and Beltfish. This species is widely distributed and can be found in both temperate and tropical waters of the Atlantic, Indian, and Pacific Oceans.

Braised :

Ingredients:
500g hairtail
100ml corn flour
4 cloves of garlic
a small piece of shallot
a few slices of ginger
1 star anise
seasoning:
pinch of salt
dash of pepper
little sugar
1-2 tbsp soy sauce
1 tablespoon fruit vinegar



Production Method:
Wash and dry the hairtail.  Cut the hairtail into thin strips with a knife for better flavor.  Then sprinkle with a little pepper and salt.  Marinate for a while.  Chop the onion, ginger and garlic and set aside.  Prepare 100ml of corn flour.  Dip both sides of the marinated octopus with cornmeal.  Preheat the nuts and pour them into 50ml of oil to fry until golden on both sides. Serve immediately.
Pour a little oil into the pot and heat, add aniseed, onion, ginger, garlic vinegar, sugar, soy sauce.  Add the fried octopus and stir-fry until colored.  Add 100ml of water and simmer for 10 minutes, the soup will be taken out and put on a plate.

1-2汤匙醬油
1湯匙果醋

將少許油倒入鍋內加熱,加入大料,蔥薑蒜 醋,糖,醬油。加入煎好的帶魚炒至上色。加 100ml水燉10min 湯汁變酬將於取出裝盤。
