Vegan Thai Curry  素菜泰國咖哩

Ingredients
1 Potatoe
1/2 eggplant
50 gram green beans
5 okra
2 lemongrass
2 bay leaf
2 lemon leafs
2,5dl coconut milk
5 pieces ginger
4 spinach leaves
1 charlotte onion
2 tablespoons curry powder
1 tablespoons turmeric powder
1/2 lime
100 gram cauliflower
1 tablespoon of green and red chili cupped in to small pieces
2,5 dl water or vegetable stock (you can add more if needed.
Salt and pepper

get started

Cut the onion in thin slices

Cut the lemongrass in this slices (see video for how to)

Cut ginger

and fry it in oil.

Add turmeric and curry powder.

Add coconut milk and let it boil

Add potato, eggplant, cauliflower, green beans and add the hot water/vegetable stock.

Boil until the vegetables are soft

Before serving add the spinach leaves

原料:

1個土豆

1/2 茄子

50克綠豆

5 秋葵

2 檸檬草

2 月桂葉

2片檸檬葉

2,5dl 椰奶

5 片姜

4片菠菜葉

1 個香葱

2湯匙咖哩粉

1湯匙薑黃粉

1/2 绿柠檬

100 克花椰菜(菜花)

1 湯匙綠辣椒和紅辣椒,切成小塊

2,5 dl 水或蔬菜高湯(如果需要可以添加更多。

鹽和胡椒

開始

將洋蔥切成薄片

將檸檬草切成薄片(有關操作方法,請參見視頻)切姜末

然後用油炒洋葱姜末加入薑黃和咖哩粉。

加入椰奶,煮沸。加入土豆、茄子、花椰菜、豆角然後加入熱水/蔬菜高湯。煮至蔬菜變軟,出鍋前加入菠菜葉,再撒上辣椒🌶️碎。
