Sandwich cake 三明治蛋糕
Voileipäkakku, sandwich cake, smørrebrødskage, salty cake or bread cake
A traditional cake from the Nordic countries. Some thing to put on a lunch table, or just as a snag in the evening when you get hungry. We are just giving you two suggestions on how to make create a sandwich cake, but you can make up your own version.
For the filling we have use creame cheese, crème fraiche and natural Youghurt, but it is possible to just use a good mayonnaise and maybe spice it up with some sweet mustard.
Have fun building your very own sandwich cake.
Toast bread around 12 slices for a cake with four layers.
150/200 gram Sliced ham and 150 gram cold smoked salmon for the salmon version
Pickled cucumber (see video) around 2 tbs (only the ham cake)
100 gram Crème fraiche (only for the salmon version)
1 dl Natural Youghurt
100 gram Fresh cheese (for ham cake)
1 tsp lemon juice (for salmon cake)
2 dl wip cream for each cake (decoration) plus 100 gram fresh cheese (each cake)
A good portion of fresh Chives for decoration. (can also be added to the filling) In the salmon cake you can also use Dill if you prefer that
Tomato and cucumber for decoration
2 dl milk for softening the bread (see video)
Creating the fillings:
Filling with sliced Ham
150/200 gram Sliced ham chopped in small pieces
Mix in 1dl Natural Youghurt
100 gram fresh cheese
Some chives if you like
Two tbs chopped pickled cucumber
Blend it all together gently.
Filling with cold smoked salmon
150 to 200 gram Chopped salmon is mixed with
A little dill if you like
1 tbs Lemmon juice
1 dl natural Youghurt
100 gram Crème fraiche
Blend it all together gently.
Then you need to wip cream and mix it with 100 gram fresh cheese. Use this for decoration of the sides and top of the sandwich cake.
Now it’s up to you how you would like to decorate the cake. We prefer to use vegetables for the decoration like cucumber and tomatoes – but its all up to you what you would like to do.
